French Mustard Tart
I learned this recipe from my Frenchman, whose mother used to always make it. It is typical cuisine of the south of France & Provence. Using simple ingredients like comte cheese, dijon mustard, fresh tomatoes, and oregano, you can serve this elegant tart with an endive salad or tomato soup.

After rolling out the crust, fit it into a tart pan. You can prebake the crust for a few minutes (3-4 minutes) with pie weights. The tart dough will shrink a little. Bake at 375 degrees.
Then remove from the oven, and spread dijon mustard generously and layer Comte cheese. If you have fresh tomatoes, you can slice them thinly and lay on top of the cheese, not layering, but touching the edges of the next tomato. Then sprinkle with dried oregano, salt, and pepper.
Bake for another 10 minutes or until cheese is melted. Enjoy with a dry light wine!
