One Pot Pasta with Ground Lamb & Delicata Squash

After making fresh pasta with my Kitchen stand mixer and Wiselet Pasta Press attachment, I didn’t want to fuss much with an actual pasta recipe. So I kept everything in the same pot and just went with my intuition.

One Pot Pasta with Ground Lamb & Delicata Squash

Ingredients
1 pound ground lamb
1 delicata squash, peeled, and cubed
1 tsp cumin
1/2 tsp cinnamon (or less)
1/4 tsp all spice
1/4 tsp cardamom
1/4 tsp cayenne
1/8 tsp clove
1/8 tsp nutmeg
2 cups milk
1 cup water
1/2 cup yogurt, cream, or creme fraiche
1 cup shredded parmesan
~12 ounces pasta
half a bag of baby spinach

Brown lamb in a large pot over medium heat, and season with salt and pepper. Add cubed squash and spices. Stir together and let squash soften. Add milk, water, yogurt and cheese and gently simmer to thicken, about 10 minutes. Add pasta and cook for another 6-7 minutes, until pasta is al dente. Once pasta is cooked, stir in fresh spinach.
