Rosemary Sweet Potato Snacks

Especially for people who don't like sweet potatoes. Also a sneaky way to dress up sweet potato fries.

Rosemary Sweet Potato Snacks

Ingredients:
2 sliced sweet potatoes or 1 bag of sweet potato fries
2 tbsp warmed coconut oil
1 tsp dried rosemary (or 1/2 tsp ground rosemary)*
salt

*Feel free to use more, if you like a more intense flavor.

Preheat oven to 400 degrees. Peel & slice sweet potatoes diagonally, into long slabs. Please on baking sheet. Warm coconut oil into a fully liquid state. Brush onto one side of the slices. Sprinkle rosemary evenly over the slices. Alternatively, mix the rosemary into the coconut oil and brush on the slices together. 

Bake for 20 minutes, or until tender. 

Sprinkle with salt. Serve warm or at room temperature. 

As leftovers, chop into small chunks and mix into a buddha bowl.
