Bain Marie Scrambled Eggs with Truffle

Ingredients for 2
4 eggs
salt and pepper to taste
1 tbsp cream or creme fraiche (or 1 tbsp butter + 1 tbsp water)
one truffle
bread

Instructions: Grate half a truffle into eggs. Whisk or blend eggs with cream until completely homogenous. Bring one inch of water to a simmer in the pot and cover the pot with an aluminum insert, metal bowl or glass bowl. Continuously stir, keeping an eye on the heat of the insert. Eggs should not stick to the bowl/insert. cook for 5-6 minutes until eggs are wet but not runny. Serve with more slices of truffle and toasted bread, immediately.
