This comes together pretty quickly if you have two cooking eyes to cook at the same time. You can boil the potatoes and pasta in the same amount of time it takes the onions caramelize. Macaroni & Potatoes Smothered with Onions and Gruyere

Ingredients for 2 servings
1.5 tablespoons butter
1 large onion, thinly sliced into half moons
2 small yellow potatoes (or starchy), peeled and cut into half-inch chunks
8 oz macaroni (or 4 oz egg noodles)
1/2 cup shredded gruyere
salt and pepper to taste
