Fried Bay Leaves (Catalonion buñuelos)

Recipe from Casa Mono, NYC

Ingredients:
1 egg white, whipped to soft peaks
1/3 cup of sugar
1 1/3 cups of milk
2 cups flour
oil for frying (enough for 2 inches of oil in a pot)
20 bay, lime, lemon, or orange leaves

Recipe summary: Whisk together sifted sugar and flour. Stir in milk until combined. Fold in whipped egg white. Bring oil to 360F/180C. Dip clean leaves into the batter, until well coated. Add battered leaves to oil and fry for 2-3 minutes on each side until golden.
