Handheld Salad
What was intended to be a tightly wrapped summer roll with lettuce and neat little sections of bell pepper, red cabbage, cucumber, and avocado….um, literally fell apart and I was left with salad in a taco. Although not what I had in mind, it’s still crisp, cruciferous, clean, and crunchy.
Handheld Salad Taco with Tahini Sauce
Tahini Sauce Ingredients
3 tbsp tahini
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp toasted sesame oil
1/2 tbsp maple syrup
1/2 tbsp grated ginger
1-3 tbsp water
Salad Taco suggestions:
lettuce of choice
1/2 bell pepper, thinly sliced
1/4 cucumber, peeled and cut into matchsticks
1/2 avocado
1/4 red cabbage, thinly sliced
Recipe summary: stir together all dressing ingredients except for water. Add water one tablespoon at a time until desired consistency is reached. Prep lettuce as taco shells or bowls. Slice veggies and fill the lettuce. Drizzle on sauce as desired.
