Whole Roasted Cauliflower with Honey Tahini Dressing

Whole Roasted Cauliflower
with Honey Lime Tahini Dressing

Ingredients:
1 small or medium cauliflower
water and/or broth (enough to cover the cauliflower)
2 rosemary sprigs and/or bay leaves (optional)
2 tablespoon olive oil
1 teaspoon curry spice
1 teaspoon raz el hanout
1 teaspoon paprika
a handful of plain hazelnuts
Honey Lime Tahini Dressing:
1/4 cup tahini (60 grams)
1 tablespoon thyme honey (or scant a tablespoon regular honey)
juice of half a lime
1 clove of garlic
For serving:
sesame seeds
bouquet of rosemary or thyme
or watercress/arugula
Roast hazelnuts: 8 minutes @ 350F/180C
Roast cauliflower: 10-15 minutes @400F/200C, then broil for 10-15 minutes until top is browned
