Keema-Style Cauliflower
I was recently hosted by my best friend’s mother-in-law to learn some of her family’s favorite Pakistani meals. While I love ground beef recipes, most of my audience prefers vegetables, so I ‘vegetized’ this recipe with cauliflower. Does it work? You tell me.

Keema-Style Cauliflower
Ingredients:
Medium onion, halved and sliced
½ tsp crushed red pepper
1 tsp paprika or ½ tsp chili
1 ½ tsp ground coriander
1 tsp salt
boiling water
Heaping tsp of minced garlic
Heaping tsp of minced fresh ginger
1 tsp tomato paste
1 pound ground round (or one 2-pound head of cauliflower)
1 whole green chili
2 Roma tomatoes, diced
2 bell peppers, ideally yellow and orange, cut in 1-inch chunks
Julienned ginger, optional
