Mashed Cauliflower
I think I’ve decided that these are better than mashed potatoes because cauliflower is lighter and fluffier, but with the same silky, creamy texture. Are you Team Potato or Team Cauliflower?
Mashed Cauliflower
Ingredients
1 large head cauliflower cut into florets (about 3 pounds or 1 1/2 kg)
3 tablespoons unsalted butter
3 tablespoons sour cream, cream cheese, or creme fraiche
3-6 cloves garlic, sliced
1/4 cup Parmesan cheese (or Provolone, Cheddar, or Romano)
Salt and black pepper to taste
