French Mustard Tart

I learned this recipe from my Frenchman, whose mother used to always make it. It is typical cuisine of the south of France & Provence. Using simple ingredients like comte cheese, dijon mustard, fresh tomatoes, and thyme, you can serve this elegant tart as an appetizer with rosé or nibble on it all afternoon/evening. 

Tart a la Moutarde - Mustard Tart

Ingredients:
1 ready-made pie crust, fully thawed at room temperature
5 tbsp Dijon mustard
8 oz comte cheese, sliced into just under 1/4 of an inch thickness (or half a centimeter)
3 roma tomatoes, sliced into 1/4 inch thickness (.6 cm)
5 springs fresh thyme
salt and pepper

Bake temp: 375F
Bake time: prebake crust - follow package directions (or until crust is done to the touch); 20-35 minutes, or until cheese is bubbling
