Pecan Pie
I considered naming this the ‘Nothing-But-Crumbs’ Pecan Pie because it won’t take you long to get to nothing but crumbs. With less sugar than traditional recipes, it’s easier to enjoy the pecans and custard without the overwhelming sweetness.
Shown here in a shallow tart pan because using less sugar produces less filling. If you want to use a regular pie pan, either make-do with a shallow pie or increase the sugar (per directions below).
Pecan Pie
Ingredients:
1 premade pie crust for a 9-inch pie dish
3 tbsp butter, melted and cooled
1/2 cup granulated sugar (or up to 1 cup)
1/2 cup light caro syrup
3 eggs, beaten well
1 teaspoon vanilla
1 cup pecans, chopped
Bake time & temp: 375/190 for 15 minutes, then 350/175 for 25-30 minutes
*If using 1/2 cup sugar, the filling will be shallow for a pie dish; if using 1 cup of sugar, it will fill a normal pie dish.
