Apple Cider Donuts with Tahini-Maple Glaze

Apple Cider Donuts with Tahini-Maple Glaze

This one is all about the tahini-maple glaze, which I’m sure would work on any apple-centric cake. I’d make some changes the next time I try this recipe, which I explain in the video. If you’re looking for a healthy donut or baked good, my website is not the best source, but this is a good recipe for healthy-ish options. It is, after all, still a donut. Ish.

Ingredients:
1/3 cup unfiltered apple cider
1 medium apple cored and diced (about 1 cup) *or use 3/4 cup of unsweetened apple sauce)
3 oz. whole wheat pastry flour (about 2/3 cup plus 2 tablespoons)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
1/3 cup sugar
2 tablespoons whole-milk Greek yogurt
1 1/2 tablespoons canola oil
1 large egg white
Cooking spray

For the glaze:
1 tablespoon tahini (sesame seed paste)
1 tablespoon dark maple syrup
1 teaspoon water

*You do need a donut pan for this recipe. Or you could probably use a mini muffin pan to make something like donut-holes or even a mini bundt cake pan.
