Purchased fresh black winter truffles at a market in Cannes on a whim. Here’s everything I learned about cleaning, storing, traveling, cooking with, and preserving a fresh black winter truffle.

Black Truffle Butter Recipe
1 pound European-style butter (unsalted), softened
1/2 tsp salt
1/2 oz black truffle, sliced, julienned, diced
Mix everything together and let sit for 2-3 days for flavors to develop. Wrap well and store in freezer for up to 6 months, breaking off what you need as you need it.

Fresh Truffle Pasta Recipe
4 tbsp butter grated truffle
1/3 cup+ grated Parmiggiano Reggiano or pecorino cheese
pasta & pasta water
Melt butter over low heat. Grate in about 1/3 of the truffle. Immediately add cooked pasta straight from pasta water. Toss pasta and butter together to emulsify. Start adding grated cheese and stirring to continue emulsifying. Add pasta water to thin out the sauce. Add salt to taste and a small bit of black pepper. Keep heat low and taste when adding cheese. Stop when you like the consistency and flavors are balanced.
