Gumbo Z'Herbes
It’s literally a giant pot of greens. While it’s traditionally a vegan dish, just greens, holy trinity, roux, and water, you can add sausage or ham hock for additional flavor and meatiness. It keeps wonderfully in the freezer, so you can always pull out a tiny pot of greens when the craving kicks in.
Also known as Green Gumbo, Vegetarian Gumbo, or Gumbo Zav. It’s the sister of the common gumbo filled with meat and takes on a similar consistency and flavor.
Choose your own combination of greens - the more varied, the more flavor (and nutrients!): collards, mustard greens, turnip greens, beet greens, Swiss chard, spinach, watercress, dandelion, kale, arugula, and even parsley.

Ingredients:
1 cup peanut oil, lard or other vegetable oil
1 cup flour
2 cups chopped onion
1 cup chopped green bell pepper
1 cup chopped celery
4 cloves garlic
2 bay leaves
1 Tbsp Cajun seasoning (like Tony Chacheres)
10 cups water
3 pounds assorted greens (i.e. kale, collards, mustard greens, turnip greens, spinach, chard, parsley, dandelion greens, beet greens), chopped (about 14 cups)
