Plantains Cooked in Coconut Milk

On vacation in Zanzibar, I found this on the hotel breakfast buffet and it’s my new favorite way to cook in coconut milk. If plantains aren’t available to you, a banana would be fine, too, although it may be a little sweeter.

Plantains Cooked in Coconut Milk from Zanzibar

Ingredients:
2 ripe yellow plantains
5 cardamom pods
1 cup water
1 cup coconut milk
2 tbsp sugar

Recipe summary: Peel, halve, and quarter the plantains. Remove any tough cores. Bring plantains, water, and cardamom pods to a simmer over medium heat. Reduce water by half and add coconut milk. Gently flip plantains and sprinkle in sugar. Continue simmering until milk is reduced to a thick consistency and plantains are cooked through.
