Sheet Pan Fish

One Pan Meal with Branzino or Red Snapper

Ingredients
2 medium potatoes, peeled and sliced into 1/8 inch thick
1 onion, sliced into 1/8 inch thick
2 tbsp olive oil
1-2 filets of branzino or red snapper
2-3 cloves of garlic, minced
2 tbsp olive oil
2 tbsp finely chopped parsley
3/4 tsp chopped thyme
3/4 tsp chopped rosemary
1 tbsp lemon juice
2 tbsp dry white wine
salt and pepper to taste

Recipe summary: toss sliced potatoes and onions with olive oil, salt, and pepper, and spread onto rimmed baking sheet lined with parchment paper. Roast at 400F/205C for 20 minutes. Pour white wine over potatoes and add fish, skin side down. Season with salt and pepper. Drizzle herb and olive oil mixture over the fish, and then the potatoes and onions. Roast for 25 more minutes, until fish is no longer translucent. Serve with additional chopped parsley.
