Bhindi (Okra with Tomatoes and Onions)
Ridiculously healthy and flavorful - it’s okra in a standing tomato sauce with lots of onions, turmeric, and paprika. From my best friend’s Pakistani mother-in-law, best eaten fresh.

Okra with Tomatoes and Onions
Ingredients:
6 cups okra, trimmed and cut into half inch chunks (2-3 lbs)
¼ cup plus 2 tbsp oil, divided (or as needed)
2 onions, thinly sliced, divided into ¾ and ¼ portions
2 tomatoes, diced
Crushed red pepper to taste
1 tsp chili or paprika
1 tsp turmeric
2 tsp salt
Juice of half a lemon
