Chard Stalk Tahini Salad

Mai from almondandfig.com shared how her family uses chard stalks (from stuffing the leaves with a glorious Palestinian veggie mix) and I eagerly wanted some for myself. If you love bitter and nutty with a highlight of citrus, this is for you!

If you need a chard recipe (so you have ‘leftover’ stems) that’s also vegan, try the Gumbo Z’herbes stew. I loved her suggestion of stuffing it into a pita for a sandwich!

Chard Stalk Salad with Tahini Dressing

Ingredients:
1 bunch chard stalks, cleaned and diced into half inch chunks
2 tbsp olive oil
1 large garlic clove, minced
1/4 teaspoon sumac
zest of half a lemon
juice of 1-2 lemons (or to taste)
1/4 cup tahini
1 small garlic clove, grated
1 tbsp lemon juice
aleppo pepper/crushed red pepper flakes (optional)
olive oil for drizzling
