Because Italian cookies are the best cookies.
300gr of peeled white almonds (or almond flour)
220gr of icing sugar (powdered sugar) + icing sugar for the final phase
85gr of egg white (2.5 egg whites) or aquafaba for a vegan option
zest of one lemon (optional, but recommended)
Cherries in syrup (Amarena cherries, approx 50 of them)
Oven temp: 350F/180C
Bake time: 10 minutes
