It looks more like something dredged up from the bottom of a pond than a tasty meal. And it’s a helluva lot of work. But it’s unique and you’ve probably never seen anything like it!

A Tunisian-Jewish Classic

Ingredients:
Spinach/Chard Confit:
4 pounds chard, destemmed, or spinach
12 cloves garlic, peeled & minced
8 scallions, white and light green, sliced
2 tbsp paprika
2 tbsp coriander
1 tsp salt
1/4 tsp black pepper
2 lbs oxtail, fat removed, cut into 2-inch pieces
1/2 cup canned white beans
Meatballs:
1/2 pound ground round
1 tsp ground coriander
1 tbsp dried mint, finely crushed
2 cloves garlic, minced or pureed
1/2 tsp salt
1/4 tsp black pepper
Cook time: 3 hours for confit; additional 30 minutes after adding the meatballs
